Sugar and Spice Oatmeal Muffins

Servings: 12 muffins

Ingredients
  

  • 2 c. rolled oats
  • 1 c. milk
  • 1/2 c. maple syrup
  • 1/3 c. oil
  • 2/3 c. brown sugar
  • 2 large eggs
  • 1 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. nutmeg
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 c. flour

Method
 

  1. Preheat oven to 400°.
  2. In a medium bowl, combine the rolled oats and milk.
  3. Add maple syrup, oil, brown sugar, and eggs; mix well.
  4. Add in baking powder, cinnamon, cloves, nutmeg, baking soda, and salt; mix thoroughly.
  5. Toss in flour; stir until just combined.
  6. Spoon into a 12 cup muffin tin that are lined or sprayed with non-stick spray.
  7. Bake for 18-20 minutes or until set.
  8. Let cool in tin for 5 minutes.
  9. Remove to wire racks.
  10. Enjoy.
