Minestrone Soup

Servings: 8 Servings

Ingredients
  

  • 1 lb. kielbasa
  • 1 Tbsp. olive oil
  • 1 cup diced onion
  • 1 garlic clove minced
  • 1 cup carrots sliced
  • 1 tsp. basil
  • 2 small zucchini sliced
  • 1 can (14 oz.) diced tomatoes
  • 2 cans beef broth
  • 2 cups shredded cabbage
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can (14 oz.) pork and beans

Method
 

  1. Slice kielbasa 1/2 in. thick.
  2. Brown in oil.
  3. Add onion, carrots, basil; cook 5 minutes.
  4. Add zucchini, tomatoes, broth, cabbage, salt and pepper.
  5. Bring to a boil; simmer uncovered for 1 hour.
  6. Add beans; simmer another 20 minutes.
