Muffins are always delicious warm out of the oven. They are especially good for fall mornings when they are filled with warming spices and hearty oatmeal. These muffins hit the spot as the weather starts to cool down! I really love how filling they are compared to other muffins like my Double Chocolate Muffins. While we really enjoy the chocolate muffins, as we make them weekly (sometimes more!), these fall morning calls for something a little extra.
All my children love these muffins and they are perfect for busy mornings when you know its busy day and you needs something that will tide the kids over until lunch, but you don’t have time for something that needs to be served in a bowl and eaten at the table. These sugar and spice oatmeal muffins to the rescue!
Filled with hearty rolled oats and warming spices like cinnamon, cloves and nutmeg make these wonderful for fall. They are still definately wonderful for anytime of the year, but they seem best served on a chilly fall morning, while watching the leaves fall from the tree.

Ingredients
Method
- Preheat oven to 400°.
- In a medium bowl, combine the rolled oats and milk.
- Add maple syrup, oil, brown sugar, and eggs; mix well.
- Add in baking powder, cinnamon, cloves, nutmeg, baking soda, and salt; mix thoroughly.
- Toss in flour; stir until just combined.
- Spoon into a 12 cup muffin tin that are lined or sprayed with non-stick spray.
- Bake for 18-20 minutes or until set.
- Let cool in tin for 5 minutes.
- Remove to wire racks.
- Enjoy.
