As the weather slowly becomes colder, and yet our days are harried with the beginning of school, we need warming, yet quick meals to serve our families. This recipe is perfect for this! It only takes a few minutes to assemble, and then is cooked in the Instant Pot for 15 minutes. I came across this recipe when I was looking for a way to feed my family more potatoes in a one pot meal, but didn’t want it to take forever to make either.

It ended up being a huge hit with my kids! They asked for seconds, and I had to tweak the recipe to make enough of this meal to serve everyone and so they could have seconds! Finding a meal to feed seven kids and have all of them like it is comparable to finding gold! So today, I make this on a regular basis and it always hits the spot!

My husband says it tastes like baked potatoes. With that, my mind is whirring with ways to change the flavors and yet keep it this easy. I can’t wait to experiment with new flavors! This would be divine with bacon, sausage or ham instead of the beef. Taco, spicy, and barbecue are seasonings that come to mind. The sky is the limit!

So I hope you enjoy this recipe just as much as my children do! It should be a hit, no matter what flavor combo you use!

Instant Pot Beef and Potatoes

Servings: 6 servings

Ingredients
  

  • 1 tsp. oregano
  • 1 tsp. basil
  • 1/2 tsp. parsley
  • 1/2 tsp. thyme
  • 2 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. ground beef
  • 1 1/2 c. beef broth
  • 10 medium russet potatoes cut into 1/4" slices
  • 2 c. cheddar cheese shredded

Method
 

  1. In a small bowl, combine the oregano, basil, parsley, thyme, paprika, salt and pepper. Set aside.
  2. In the Instant Pot, add the ground beef and turn on the sauté setting. Cook and stir until beef is fully cooked.
  3. Remove the beef to a bowl and set aside.
  4. Add 1 cup of beef broth to the Instant Pot and scrape the bottom of the pot to get up all the bits.
  5. Add a layer of potatoes, a layer of ground beef, a layer of cheese and sprinkle with a teaspoon of the seasoning. Repeat layers until all ingredients are used.
  6. Pour the remaining 1/2 cup of beef broth over the top, then secure the lid, making sure the vent is turned to sealed.
  7. Cook on manual on high pressure for 15 minutes.
  8. When done, quick release the steam and serve.
  9. Enjoy!
